Subject: [PATCH] Bump stream-gears to v1.0.7 and update install docs

Updated stream-gears crate version to 1.0.7 in Cargo.toml and Cargo.lock. Revised README to use 'uv' for installation and updated backend dependency installation instructions to use 'maturin dev'.
